Une Vallée Cabernet Sauvignon Blend 2019

Was this a Rhône blend in a previous vintage, or was I rating another wine? Perhaps the varietals change from year to year, so long as it represents “one valley”, i.e. Walla Walla. Regardless, this vintage is a nice Bordeaux style blend, 60% Cabernet Sauvignon, 25% Merlot, 15% Cabernet Franc. Good stuff! It’s a big wine with balanced acidity. I enjoyed this as a cocktail wine. The mouthfeel is rich and thick, but not cloying. The use of oak is admirably restrained. It appreciated in flavor after some decanting. — 2 years ago

Reserve Walla Walla Valley Cabernet Sauvignon 2016

The 2016 ‘Reserve’ Cabernet Sauvignon by Saviah is another masterpiece by the talented Richard Funk of Saviah. Sourced from the McClellan Estate and Annie Marie Vineyards, the Cabernet shows heady aromatics of dark currants that meld with dark chocolate shavings, tar and black licorice that all march in unison. The palate is dense and decadent with layers of blackberry compote, black licorice candy, creosote and suggestions of Turkish coffee. The long finish lingers as this massive, yet elegant wine has some incredible aging potential. Be sure to give this at least an hour decant if enjoying in its youth. The Stones Speak Funk Estate Vineyard Syrah 2016

The Stones Speak. Did they ever! Full bodied, dense concentrates of decaying fall leaves after a fresh rain shower drenched in minerals, fine polished fully integrated tannins almost leaving a sweet edge. All secondary and tertiary notes. No distinct fruit to be recognized. It was like drinking extracts squeezed from the river rock on which they grow the Syrah. We tried pairing this wine with a cheese that would compliment it - Manchego, Jarlsberg, and Gouda. The Manchego’s nutty flavor brought a sweetness outcompeting the wine so it was out of balance. However was lovely to eat after a sip of wine, pairing nicely with the aftertaste. The Jarlsberg’s subtle flavors disappeared with the wine-didn’t distract or bring out the flavors; but the Gouda stood up and made an excellent pairing.
