Dreams Come True Junmai Daiginjo. There's some beverages that recalibrate our palates. As a sake lover, but not an expert, this is one of those discovery moments. Vanilla rice candy and white flowers in the nose, a dance of dry and floral/earthy complexity across all parts of the palate and tongue. Balance that is impeccable, depth that is humbling. I should give it a 10.0, but I haven't tasted enough sake to know if it's as perfect as I think it is. I feel like a bum tasting Echezeaux. — 9 years ago
