This was described to us as having “layers of earth” and there was an earth element but the first impression was of fresh, bright red cherry and currant with ample acidity. It opened up to deeper notes of dark cherry and earth. Paired well with a modern version of Peking Duck with a rich reduction sauce spiked with sherry vinegar.
