Technical Notes T IL T H Tilth - the composition of soil 2017 - Napa Valley Sauvignon Blanc COMPOSITION 95% Napa Valley Sauvignon Blanc 5% Napa Valley Muscat of Alexandria TASTING NOTES Our Napa Valley Sauvignon Blanc fills the glass with aromatics of pear, apple, and elderflower liquor. The palate supports the nose with lifted acidity, stonefruit, and a succulent mouth-feel that is a result of our monthly lees stirs. PROCESS This Sauvignon Blanc is sourced from Burkett Vineyard in Saint Helena, and a vineyard in Yountville that lies just a few hundred yards from where we make the wine. When we harvest these vineyards, the fruit is whole-cluster pressed to neutral french oak where a majority of the juice will be left to ferment spontaneously. After fermentation, the wine is left in the same barrel to age for seven months before bottling. We stir the barrels monthly to help lengthen the palate and balance the bright acidity.
