Been experimenting with aging Beaujolais Nouveau since my wife gets a bottle every year from the French restaurant she works at. It's slightly effervescent, like pop rocks, when it first hits your mouth. Otherwise the grape juice fruitiness seems to have toned down. I assume we left this one sitting around for too long but am curious if anyone has tried letting it age. — 10 years ago
