Takes time to open up on the nose. Has hints of a sweet caramel, light ripe custard fruit, sweet apricot flowers and a light toasted nut. On the mouth you get a nice acid with a smokey element and a bitter caramel tone. A good minerality still remains, with an elderflower note. The barrel aging does add an interesting complexity, but doesn't seem to over power the delicate nature of the mataossu. — 8 years ago
