Taste: big soy sauce with sour cherries and under-ripe strawberries
The first time I had this, it had aged for about 9 years and the tannins were huge - after aging for 15 years, the tannins have mellowed and opened up a very (VERY) subtle sweetness which complements the umami profile really well. — a month ago

Taste: cherries (the Luxardo cocktail cherries), rosemary, msuhrooms, wonderfully umami after the initial sweetness
