“What grows together, goes together” is a wine-pairing principle to live by!

Tonight, we’re pairing a classic Hungarian dish of chicken paprikash with a dry Furmint wine produced by Royal Tokaji in the region of Tokaj, Hungary.  🇭🇺

This particular wine comes from one of only two “great 1st growth” vineyards, called Mézes Mály, planted with 40 y/o vines. This site has a south-facing aspect, ideal for capturing longer sunshine hours during the growing season, which aids in ripening grapes. ☀️🌱

The grape used to make this wine is Furmint, an indigenous white variety capable of producing top quality wine in a range of styles from sweet to dry to still to sparkling.  It has a naturally high acidity, even when ripe, which supports balance and refreshing qualities in the final wine. ⚖️

This wine was fermented and aged (10 mos) in Zemplén oak barrels, lending richness and a weighted mouthfeel.  The acidity is racy with layered notes of lemon, kumquat, ripe white peach, nectarine, honeysuckle, white blossom, wet stones, flintiness, saline, and sapidity; an elegant and textural wine that stands up nicely to (yet doesn’t compete with) this savory meal.  🥘 🍽️
