Very acidic and green at first, after being paired with cheese? Game changer. Feta brought out the gaminess, Gouda brought out the smokiness, and pepper jack brought out the spiciness. I can totally see this being paired with BBQ or a rack of lamb! (Would not suggest to drink without food pairing)

Light garnet color, long thin legs.
Taste light but not anemic, the dryness is pleasant. Wet earth, faint berry.
