Ok peeps, many people have asked for more deets regarding our little cellar...
1.8m x 0.6m x 2.25m. The floor is Portuguese black slate (1cm thick). Floor, walls and ceiling are insulated with high-density foam, which has a low thermal conductivity. Chiller is housed remotely. Ducting pulls clean air from outside, and dumps exhaust air outside. Basically, everything is custom - my design, and a great contractor realized our dream. @Mo Salem was instrumental with renovating our home, and the germ of the idea came from him.
This wine big and bold. Visually show its age. Cinnamon, cloves and pepper define the nose and palate. The oak monster is evident on the mid palate. Great tannins and complimentary acidity. This will sail on for another 5 years, but best consumed now. — a month ago

I know that this is NV but found this buried at the bottom of my cellar. Has been there since 2017 so an extra 3 years of ageing.
What a difference those 3 years make! Superb complex tertiary flavours and fine bead. Tastes like SC from magnum. Spectacular. Going to try laying one down for 10 years to see how it develops. If it follows this path it should be amazing. — 11 days ago
The colour is fairly dark and pronounced which shows a little bit the amount of new wood more so then premox. The nose is very aromatic, caramel, some ripe yellow fruit. The palate follows the same path, ripe and still oaky, acidity on the low side slightly that makes it a bit too heavy at this stage. En Caillerets is a great Terroir that needs time, but in this case I had more fun with the 2014’s from this producer. 88-89 pts for me
Couleur prononcée qui démontre plus le style boisé du producteur à cette époque que de l’oxydation prématurée. Le nez fait boisé, caramel et fruits jaunes très murs. La bouche est sur le même registre, riche et ample, un peu lourde manquant un peu d’acidité à mon sens. En Caillerets est pourtant un grand terroir qui demande du temps, mais j’ai eu plus de plaisir avec les 2014 du domaine dont le style aurait aussi changé un peu. — a month ago

Deep scarlet in color because of the extra amount of Pinot Noir with plenty of tiny bubbles. A wild nose of black and red berries mixed with blood orange, cinnamon, and herbs de Provence. This is an intense champagne and it doesn’t skimp on complexity either. Drinking more like a red wine at times, there’s an almost rusticity at first but soon evolves into a more structured and elegant pour. The brioche and roasted nuts are still here on the mid palate, along with warm Eastern spices. Creamy on the palate with blackberries, strawberries, and herbs. This was such a fun unconventional sparkler. — a month ago
Big and bold. Deep scarlet, heavy, intense flavors. Licorice, spices, cedar, black cherry. Huge tannic punch carrying black olives. And a very long finish. Excellent. But I think I’ll space out the remaining case over the next several years. At 10 yrs old this still has a long long way to go. — a month ago
