Hazy yellow with visible sediment, fine persistent bubbles, and a quickly-dissipating mousse. Green pear and cement block on the shy nose and medium light palate. High acidity that's tamped down a bit by the sediment, which also adds a texture that takes the place of true tannins. The result is a light and very dry feel that should appeal to the adventurous as well as traditionalists who really like dry wines. Drink now. — 2 years ago
