One of the best CDLR’s in the biz showing beautifully tonight with an ultra complex and seductive bouquet of candied red cherries, rose petals, coffee beans and game meat. The palate is luxuriously silky with obvious grand cru and old vine concentration, particularly for the vintage, and there is beautiful purity and elegance to balance its power. Such an incredible Champagne from surely the the next grower to develop that cult following. Straddling Avize and Cramant, single vineyard BdB Chemin de Chalons, (also made by Jacques Selosse), is a stunning expression of the site and the iconic village of Avize. It’s incredibly elegant, pure and detailed with seductive aromatics, a chalky mineral core and an amazing pillowy mousse that fills the mouth and continues to stay with you, giving way to its long and racy finale. Now with a few years of bottle age, the second release of this elusive Grand Cru, LC20, has really added even more detail and complexity. It needs air—2 hours open is an incredible difference from pop and pour. It’s ultra vinous and layered with a caramelized stone fruited profile with salted hazelnuts, curry leaf, gun smoke and lavender, with a vibrant, satiny mousse and a long saline-mineral inflicted finale. The sleeper vintage, one at this time I bet to be even more showy than the illustrious 2000. It’s simply just ready to go after a short decant wafting from the glass with layers of cassis, black truffle, violets and licorice. This is a wine of texture and elegance, as Margaux should be—It’s liquid cashmere in the mouth with melting tannins and a black truffle and mineral inflicted finale that keeps on going. A profound young Preuses. Decanted 90 minutes in advance, and only to improve in every facet as each minute passes during dinner, 2020 Preuses is a tremendous success and already showing so much of its brilliance. It’s aromatics are layered with ultra defined orchard fruit, white flowers and citrus oils with an oceanic edge and the palate is concentrated, mineral and focused with considerable tension, drive and a racy mineral-saline finale. (this is only released after 10 years of bottle aging). A fully mature, exotic and somewhat honeyed nose displays full-on secondary aromas of spice and ripe white-fleshed fruit but no sous-bois. The delicious, rich and full-bodied flavors are a combination of succulence and power while displaying excellent length on the clean, dry and complex finale. This is exceptionally good and especially so for the vintage.

The 2015 Pouilly-Fuissé Grand Beauregard Hommage à Joseph Burrier is a special cuvée, a selection of the best dozen or so casks, aged two years in cask, one year in stainless steel and seven years in bottle. It has a lucid green-gold hue and a very Côte d'Or-like bouquet that you might liken to a Chassagne-Montrachet—very well defined with scents of lime, yellow flowers and later a touch of clear honey. The palate is lightly spiced on the entry with a dab of stem ginger, tangy with marmalade and sour lemon. Slightly petrolly towards the finish like a mature Riesling with noble reduction, this is a fascinating late-release that will give pleasure over many years.(NM) — 5 months ago

A vintage, dry, winey, elegant, lively and nuanced champagne. Fine but intense bubbles. Deep aromatic bouquet of nuts, almonds, dried fruits, apricot, brioche, butter. Persistent finish with sweet bitters, consistent with the nose. Perfectly accompaniment to a meal.

En bouche, il est souple, avec une belle acidité et une longue finale. On y retrouve des notes de cèdre, de fruits compotés, de cerise et une agréable touche épicée. Il accompagnera à merveille notre carré d’agneau et nos choux de Bruxelles balsamiques.
