I haven’t had a lot of aged Chablis, but this is drinking remarkably well for being 13 years old. Austere; high acid but with some weight to it. Flint and lemon peel but I would wager this saw at least some oak as there is definitely a little butterscotch in the background both in the nose and palate. This is the ideal personification of Vouvray. The nose is alive with green apple, pear, white flowers, lime zest, mineral and chalk. The mouthfeel is dry, focused and vibrant with sharp acidity, a crystalline texture, and layers of citrus and saline notes that linger. Great in its youth with great aging potential. — a month ago
1995 vintage. Not decanted. Appropriate color. Good fill and cork. Beautiful, integrated nose. Flavors same. Medium-medium heavy body. Dark fruit, earth and spice coalescing into a unified experience now. This is at the top of the bell curve for the next half-decade and probably longer.
