"Les Chassignols" Moulin-à-Vent Gamay 2016

Serious cellar potential, and that is probably where this one belongs for awhile. Very primary, dense, juicy and structured. Crunchy wild berries, gravelly mineral character and slightly herbaceous. This bottling needs more time than even the grand reserve Juliénas because of its much shorter elevage and early release time. It will surely reward, but showing some mutedness now.

*Day 3* Already considerably more rewarding. The tannin structure is muscular but supple, and there is more mid palate density and clarity. Showing some dried fruit aromas at this stage, but not to the point of feeling tired. I’m more confident that this will drink well in 2021 or perhaps 2020.

Star bright straw gold in the glass. Nose of baked quince and citrus rind. Echoed on the medium-bodied palate with stony minerals and underripe white peach. Firm acidity throughout as expected from this solid Sud-Ouest white. Pork chops, cassoulet, or even light cuts of beef with Béarnaise will pair nicely. Drink now through 2023. — 23 days ago

On the nose butterscotch, vanilla and lemon honey cough drops!
Taste...loads of tart lemon! Soft honey not sweet...eucalyptus..wet chalk..a smidgen of wooliness that will develop with time for sure!
This wine is young and already has wonderful layers to peel!
