Apparently Antoine tried to make an oaked Fiano but half way through didn't like the result and tried to do a Vin Jaune like wine with a 7 years ageing process in barrels not completely full
The result is divine
A wine that trasforms from almondy to sweeter mandarines notes
Orange blossoms when it reaches room temperature
It's a cheese wine, it is not purely sweet
I reckon it would match very well with the Napolitan struffoli or with the pastiera.
