Dropped a lot of sediment on decant as you’d expect. Threw off tons of great floral and fruit aromatics while decanting.
Tried pop n pour at cellar temp. There’s tension here for a 20 year old wine. It’s nice. Fruit is hiding a little. There’s a black olive thing that is consistent with other aged SMs that usually blows off. Will update after trying again at hour 2.
At 2 hours it’s singing. Black olive blew off and replaced with black raspberry, currant, fig, and blackberry. Nose is cigar box, floral, and a hint of perfume. Tannins are grainy and well integrated throughout. This is great and has plenty of time left. Will not make the three hour mark!

Let this blow off for an hour and it blossomed. It’s interesting that this has some Petite Verdot, but not Cab Franc. I’d have guessed the opposite. Also, not as much tertiary as I’d have expected. This is lovely and plush, hardly an edge. The nose is white pepper, new leather, earth, and cherry. On the palate is strawberry, stewed plums, cherry, and finishes with a pinch of caramel tannins. It’s a thing!

Delicious blend...Elivette is as good as it gets. This 2001 is perfectly balanced with bright dark berry flavors and silky smooth tannins. Been a while since we have enjoyed such a fine wine! 89% Cabernet Sauvignon, 8% Merlot, 3% Petit Verdot...14.8% A.b.V.
