100% Pinot Noir, a 3-day cold soak, saignée method, results in a purple-pink fuschia color with aromas of red berry fruits, biscuits and floral spice, spent 24 months on tirage (on the yeast). On the palate flavors strawberry, rose hips and sweet herb spice, nice mousse and bubble flow. Medium+ finish, lively acidity ending with fruit, spice and yeasty mineral character. Pair with Salmon with dill sauce or sushi.

Pulled from cellar, 2005 Schug sparkler, holding up fairly well but fruit is fading a tad, might betime to drink. Nose still fresh, big strawberry & cherry. Good texture mid palate, very dry and tart finish.
