Subdued & a bit shy. Fresh pastry dough, underripe pear, a hint of marcipan. And yet, so fresh, cool, mineral, with a pleasant herby whiff. Enticing.
On the palate - what a mouthfeel! There’s creaminess, there’s weight & satisfying fullness yet the whole seems almost weightless! Almost devoid of fruit, yet nothing is missing. And then there’s the structure holding everything in place - zingy acidity, a bare hint of tannins, a delicious savoury backdrop, cool minerality. Refined and very long.
And all this with barely 12.5%alc, making it so dangerously drinkable.
Damn, he makes fine wine!!
