It’s a bit acidic for my liking and a bit yeasty when you first open it. I feel like this could age even though a lot of experts say to drink it now.

Leftovers from a tasting about 24 hours ago. Recorked from last night and the spoils consumed today. QUITE a huge number of bubbles left here! Nose is honeysuckle and lemon. Little bit of brioche and sourdough toast in the entry and middle. Finishes with an overt sweetness and a nice rounded character for being such a young vintage sparkler. I have come to love these offerings from Roederer and believe that they can go 10-15 years without any doubt in my mind.

My favorite champagne so far. It's a little on the sweeter side, which I suppose I used to want, despite now having settled into the true brut flavor profile. Maybe I'm still more of a sucker for the sweet than I thought. Anyway, it was extraordinarily smooth and I really can't come up with any complaints here. Delicious.
