One of the reasons I keep coming back to Chef Norman's 1921 in Mount Dora is for their interesting wine collection. One of the partners has been generously bringing in special bottles from his private collection. This one was beautifully aged and enjoyed by our guests.

Tried the '90 recently, spoke of how amazing a producer of Californian Cabernet it is, but just needed a little more time, this '85 is well & truly on point, everything is in balance, there's fruit intensity yes, but the development/complexity/layers are really shining through, outstanding stuff.

1985 vintage. Nice fill. Excellent cork. Decanted and tasted after 15 minutes thru the 1.5 hours it lasted. Very little sed. Plenty of color. Light-medium body but got bigger and more developed after 45 mins or so. Tobacco, earth and cedar in spades along with dark fruit. This has plenty of life remaining at a high level. Wonderful stuff. 3.24.24.
