This has lasted for 3 weeks, open, in my fridge, and it’s still incredibly dry, crisp, and very drinkable. The acidity is as taught now as it was when I first opened it for my wedding. Paired perfectly with fish, the nose is very floral, with hints of Myer lemon, orange peel and beautiful citrus flowers with a light body, a very pale yellow, with hints of green, and a palate that hits with salinity, minerality and a sharp point of acid that hits early, and dulls to the end, emerging with further floral and crisp green fruits.
