Pale straw with very fine bubbles and quickly dissipating white mousse. Nose is clean and inviting yielding baked quince, and white pepper. Palate is crisp and clean yielding toasted citrus rind, baked quince, white pepper, and white flowers with yellow apple on the moderate finish. Medium plus+ acidity, of course. This is Pommery’s “gastronomic” offering and I can see why. Lithe enough to properly accompany classic white wine dishes, while giving just enough “stuff” for weightier fare. Drink it when you buy it.
