Pale rosy straw gold. Fine bubbles and quickly dissipating white mousse. White cherry, green apple, and lightly toasted brioche on the nose and scintillating medium palate. Firm acidity; lengthy finish. Leaner than the Brut Royal, but still on the rich side. Pommery’s “gastronomic” Brut always satisfies and is a great match for almost anything. I’m having mine with teriyaki black pepper salmon and the lemon bars that follow as dessert. Drink it when you buy it.
