Heavier body for a champagne. Green apple and mineral water nose. Lots of acidity, soft fruits in the mid palate through the finish, and lingering lime at the end. Nice balance of fruit and acidity, however, acidity is more dominant making it perfect for food pairing. I tried it with a fried tuna cake and a spicy Indian dish, went well with both.
