24 Hour Update:
Nose has cold, hand-whipped cream, green pear flesh, fresh lemon pith and lemon cream cheese puff pastry.
Palate has pear juice with a squeeze of fresh lemon, oxidized red apple, candied lemon with some serious minerality on the nearly endless finish. So lovely...
Blanc de Blancs, aristocratic; I'd love to drink nothing but the Grand Cru's of vintage Champagne, so indulgent!
