Really a lovely chablis. Quite restrained in a very nice way. Flinty, sea shell, lemon peel. Delicious.

One of Patrick Piuze’s 8 village-level Chablis, made with hand-harvested fruit sourced from a 2.5 hectare plot in the commune of Fyé – right next to the 1er cru Chapelot and opposite the Blanchots grand cru (on the right bank of the Serein river). Fermented and aged entirely in stainless steel tanks. Some green pepper notes on the nose. Fresh, mineral on the palate. Saline finish. I preferred the Terroir de Chablis.
