Still suffering from Jet lag but need to push through. Here is the first before our New Years Eve party this evening.

Wishing you all a Happy New Year and hoping to need more of you in person this upcoming year!

Light pale yellow with light bubbles. Creamy on the nose with notes of biscuits, light ginger, and some pear notes. Medium yet crisp acidity (6/10) and medium bodied. Layered palate with notes of apples, stone fruits and a little bit tropical. Builds on the mouthwatering aspect as well with solid minerality. Medium plus finish. Drink till 2018.

Made up of 50% Pinot Noir, 30% Pinot Meunier, and 20% Chardonnay. Fermented in stainless steel for 8 months before secondary fermentation in bottle for at least 36 months on the lees.
