Holly was making bœuf Bourgogne so I figured this would be a really nice way to ease into our dinner party. Initially, this was a little awkward, “grape-y” and somewhat prickly on the tongue, what seemed like some secondary fermentation happening in the bottle. After about 15min, the faint fizz was gone and this opened into something rather nice! A touch of grape jelly, a bit carbonic...super primary...certainly a bit whimsical at this stage. This would probably benefit from some time in the cellar.
