You can tell that this is a much warmer climate than Champagne as this is a bit riper and has more richness than real champagne. Beeswax, golden delicious, and lemon curd round out the mouth. Nice persistence and not as dry as you'd expect for a Brut zero, but refreshing all the same.

Lots of acidity and tons of minerality. Notes of citrus. Pairs well with cured meat and incredibly well with blue cheese. Medium finish.

60% Pinot, 40% Chard. 100% wild fermentation but doesn't taste like it. A rounder body from the Chard but still a good amount of acid. Very nice!

Clean and youthful, soil and toasty autolytic notes

Dry, fruitiness masks the med+ acidity, Medium body. Flavor is soil and toasty autolytic, with some lemon pith. Finish is med.

Good on its own, but could use food such as paté on crostini.

Very good, drink now.
