Bright acidity, of course, enhanced by the bubbles and tamping down the demi-sec sweetness a bit. Blanc de blancs lets the purity of Champagne shine through and Bonville is a king of blanc de blancs. An excellent demi-sec that will pair wonderfully with most meals and all celebrations. We’re having Beyond Sausage pizza. Drink it when you buy it.
