Fonseca
Guimaraens Vintage Porto Port Blend

Hedy’s dessert-Chocolate Soufflé with Cream. Paired with the 2012 Fronseca Guimararens Vintage Port. Yum!
Certainly early on the Port but, the only 375ml I could find in my cabinets before dinner.

Fonseca Port was founded in 1822, grew rapidly and maintained by successive generations of the Guimaraens family. Aged for 20 months in oak and has about 100 grams of residual sugar. Wow grabbed a taste of this youngster. Big and powerful with great fruit structure and complexity. Ripe fruits, cherry, currants and jammy tones, well balanced at its young age. A powerhouse of tannins, lingering and elegant. Need to wait 10 years before you can appreciate its finesse. Tasting Sample.

This port was bought at a charity auction, complete with the slat from the shelf in the cellar. The cork came out in two parts but performed its role beautifully as the port itself was as fresh as a daisy. The palate was unusually minty. Intense on the palate, bursting with licorice. The port evolves through a long finish that seems to linger forever.

Fonseca Guimaraens 1987 Vintage Port (half)
Open 2 days and finally mellowed out, this was intense and quite sharp and in need of a chill and decant.
Nose and palate of ripe cherries, red licorice, milk chocolate, cinnamon sticks and caramel. A little heat, even with a chill, is still noticeable, but the rest of the wine has risen up to bring it back into more balance.

@quesyrahsera you were saying 1987? I forgot I also opened this on Saturday. @fonsecaport #port #dourovalley #guimaraens
