Surprisingly, I liked this a bit warmer than most sparkling wines. Would have blinded it as high end west coast sparkler. Little yeast, not much chalk or limestone, some reductive/bruised pear on the finish. Granny Smith Apple on the nose and mid palate.

This is not going to knock your socks off by any means, however if you were looking for a light-bodied, green apple with a hint of walnut, you have opened the right sparkler. This wine pours with tiny bubbles, settles down relatively fast. Enters with a crispness to it. Granny Smith apple with a dried Walnut type of texture. Is a medium bodied sparkler after it had 20 to 30 minutes to figure itself out. I think this one still has a little bit of growing up to do, but it is quite enjoyable now so I don't know what the concern would be with going Bottoms Up!
