Having this 2031 with ceviche snd it is a perfect pairing. Fresh balanced subtle refreshing. Some of the 2021 Sancerre’s have been too green all chives snd jalapeños but this one has just the right hints of fresh sea peas with subtle citrus fruits , just right.
