Wow. Elite tier Chablis. Yes it has fruit. Massively yummy Chardonnay fruit. I mean. It’s lechet. But it has acidity the fights toe to toe with the fruit for attention and creates insane tension on the palate. Really lively richness. Nose is nutty and rich. Long rich lingering finish. Wow. If you a like white burgundy and are not collecting this you are leaving dollar bills on the sidewalk. Bought from Fass Selections. ... hint of lemon pith creeping in as this aerates. Just that knife edge of richness and tartness. Wow.

16-20 years ago I was shunning Chardonnay, now in retrospect I'm fully convinced I was simply trying to like the wrong stuff. In the late 90's there was a great proliferation of heavily oak influenced CA Chardonnays to choose, they were every place within reach at every shop. Had I started with Chablis, likely my take on the grape would have evolved more respect earlier in my palate development.

Fast forward to recent times, and I simply can't get enough of white Burgundy. The diversity and complexity of flavors, all derived from the growing environment, still astounds.

The bottle at hand is likely my favorite Chardonnay from anywhere, in the sub-$30 price point.

Nose of a distant seashore, lemon skin, lemon squeezed over flint, slate and granite slabs. (I'd really like an oyster right now!)

Palate is lemon-y tropical fruits, limestone dust and citrus pith, so rich with a med-long finish.

Chablis...So Good! If I were to ever write the manifesto of the Chardonnay fan, it may begin with Léchet fruit.

Lickity split. This is super clean. Seashells on the nose and oyster brine. Lime zest. So precise and stanky. Love it. It smells tense. Amazing tension on the palate and super intense with great balance and so much acid. Long almost tactile finish that clamps down and grips your palate like a vice. Awesome.

2014 Chablis...So Good!

Nose of a smokey lemon, grated across an edge of a slab of slate.

Palate is constantly evolving, like wow, lemon skin, limestone dust, an appearance of sweetness but quickly disappears, the acid balance is perfect, this IS a complicated bottle of Chablis.

We're really looking ahead to further development tonight, and likely finish tomorrow, so I will add additional notes. $30, this is just insane!

24hr Update: Quite consistent, smokey aspect to the nose has faded, palate is picking up joyous tropical fruits.

This has gone from baby Hercules to brilliant but slightly spastic toddler. The genius is evident but the wine is in an awkward phase. You can tell it has the stuff of over the top greatness from the nose which ... sadly is indescribable. It’s has this lovely slightly rich perfumey thing going on. On the palate it has that awesome Lechet fruit. Great acidity and nicely mineral. Nice juicy finish. But there is an extra richness and depth just under the covers. If you bought this. I’d hold for two years. And thank the wine gods that you bought it. Fabiens wines will be only for the rich some day. Buy as much as you can store. Bought from Fass Selections.

@Delectable Wine this is the Cote de Lechet

Soaring nose of minerals, seashells, kimmeridgian love and layered. Classic. Gorgeous palate if a bit young. Opulent but perfectly chiseled. So elegant but stuffed. Really dense and juicy with impressive structure. Just a stunning wine with incredible depth.

I love this wine. Powerful fruit. Just crunchy minerality. Just exultant citrus on the finish. So delicious. Bought from Fass selections. ... as this opens it becomes more geeky. This insane mutherf&$!$& minerality. Just granitic. Wow. I hope I have more of this. Should age well.
