Wow. This is really good right out of the gate. Reminiscent of a 1er Cru Chablis. Nose is intensely earthy/mineral, with straw-inflected appley fruit underneath. A little of that Chablis brothiness I associate with Kimmeridgien (sp.?) terroir. Intensely flavored in the mouth, with the acids and the minerality combining for some serious pucker. Crisp, bone dry, and refreshing. Would be amazing with grilled shrimp or prawns.
