Bright, pale straw. Initially shy, but inviting nose of underripe quince. Echoed on the medium palate with an intense mineral streak and hints of burnt citrus rind on opening. As the wine develops in the glass, the mineral note subside and rustic fruits come to the fore. Medium plus acidity supports it all the way through to the moderate finish. This is a wine that can support the entire meal: mineral notes parallel light starters, fleshy pomes buttress the main course, and more opulent stone fruits finish with soft cheese or pastry. Rustic fare pairs particularly well. Drink now through 2028.

This is the Rare Wine Pairing we had tasting at Lazy Bear. Paired with: White Sturgeon, California Caviar, Apple, Wild Foraged Greens & SF Halibut, Sorrel, Buckwheat, Cucumber. Muted on the nose initially. Opened up over the course of the meal. Fresh citrus, salty salinity, melon. Such a richly textured wine on the palate: honeysuckle, pineapple, orange blossom, mango, grassy characters too. High acid, long finish.

2015 ‘Buisson Renard’ by Didier Dagueneau, is a spectacular effort. Now headed by Didier’s son, Louis-Benjamin, Dagueneau wines continue to set the standard for the Pouilly-Fume region. The wine shows wonderful flinty and damp earth tones with lemon oil drenched sourdough bread on this marvelous bouquet. The rich, almost unctuous texture to this wine, truly satisfies. Lemon zest, beeswax, ripe pear and starfruit flavors with wet stone and smoky mineral undertones all nicely amalgamate on the palate. Intense and showing beautifully in its youth, this dazzling Sauvignon Blanc will have an exceedingly long life in the cellar. Drink 2019-2033- 94

Didier’s wines always capture me, they are haunting in their richness and concentration. This 2006 was phenomenal, it started off with heavy, smoky lees and tropical waxed fruit before becoming light as air and extremely mineral, and going back again. So much movement, and dynamism.
