Pale, nearly colorless yellow with a hint tiny bubbles. Aromas of oyster shell, tart granny smith apple. Crisp, high acid entry to palate. Linear in the mouth with a bracing texture. Finishes with a slightly clenched, acid-driven drying sensation. Should be a great match to intense flavors like the classic tapa of anchovy, olive and picked Gilda peppers.
