Umami city. Damp soil, soy broth, dried shiitake and porcini mushrooms, an echo of salty sour cherry in the background. I adore Coteaux Champenois, and I’m not usually one to complain about earthy flavors and restrained fruit but...I could have used more fruit. I imagine there wasn’t a ton of fruit to begin with but maybe I would have enjoyed this wine more 5-8 years ago with a bit less development
