Didn’t have patience to wait… drank over a few days and this showed best on day 3.

Tart fruit throughout. Plum, cranberry, cherry pith, and a chalky, sweet tart minerality. Solid length. Appreciable style. Hold on this one for a few more years. Good have some room to develop in the bottle.

Carbonic feel. Plum and blueberry fruit. Hints of tar, yet also chalky. Blueberry and plum carry into the palate. Wonderfully bright and super tart and fresh. Great style. Easy to drink yet complex. Price is on the high end for this fruit, but I think it’s worth it. Compare to cru Beaujolais. Pair with a prosciutto topped neopolitian pizza.
