Third wine for our wine pairing at Chef's Table this evening, paired with a butter poached lobster with cavier and bruere blanc.

Light pale yellow. Layered nose with notes of citrus, apples, white stones and lemon zest. Strong acidity (7/10) and bright. Crisp and refreshing palate with lots of lemon zest and minerality. Medium bodied with a long finish. Drink till 2023.

This is starting to open and showing it's stuff. Plenty of richness from warm vintage but it's better balanced than 9months a go. Great entry level Chablis from one of my favourite producers.
