Product characteristics
This is the wine which represents our estate more than any other, both because it was among the first wines to be produced and also because it is the wine of which we produce the most quantity. In any case, this wine is produced with the same care and attention to detail as is used in the production of our most prestigious products.
The first vendemmia (harvest) dates back to 1987, carried out then as now on the hills of San Michele at approximately 200 m. above sea level, in south/southeast facing vineyards, which lets the grapes ripen perfectly. The soil is mixed, tending towards clay with a good presence of bone, averagely fertile.
The grapes used are : Sangiovese (80%), Canaiolo (15%) and Colorino (5%).
In the vineyard we use cordon spur and in part gouyot pruning, with a density of approximately 5,000 plants per hectare.
The grapes are harvested by hand, usually starting around the 15th of September (depending upon weather conditions) and finishing towards the 15th of October.
Fermentation takes place in steel vats at a temperature of 28°/30°.
Maceration lasts on average 15 days.
The wine is cut shortly before bottling; the wine is then left in the bottle for at least 2 months.
Grape variety : Sangiovese 80%, Canaiolo 15%, Colorino 5%
Alcohol content : 12.5% Vol.
Colour : Ruby red with purple tones, well bodied.
Aroma: Intense and long lasting, with hints of fruit, wine and slight flowery notes.
Taste: soft with a lively freshness and a pleasantly good tannin content.
Comments : Well balanced wine, at its best consumed within 4/6 years from harvesting.
Food pairing: This wine can be served with all types of food, from antipasti, as the marked scent of fruit and flowers of the wine render it very suitable for drinking with the typical Tuscan " crostini" of patè or with salami and other cured meats or cheeses, through to first courses, especially those with strong, fatty sauces such as meat sauce, amatriciana or carbonara, and second courses of roasted or fried white meats, or red meat such as roast beef, for which both the tannin and the alcohol in the wine are important.

The Organic Certification body chosen by the Company is the "Consorzio per il Controllo dei Prodotti Biologici" (Consortium for the Control of Organic Products) with head offices in Bologna.
This body is recognised and authorised to carry out its certifying role by the Italian Ministry for Agriculture. All of the Company's administrative and production processes are subject to inspection by the Consortium at least twice a year.
