Great Italian Pet Nat style sparking. Tart, musty, light bread and bit of olive oil notes. Great light bubbles. Had with takeaway sushi.

This is some pretty bomb natty juice. Very very tart on the palate...reminds me of ACV and berlinerweisse....minerality is the first to arrive, some fruit shows up later but not much. Reminds me of eating underripe green plums in Eastern Europe. Tannic and bitter. After 45 minutes the flowers and melons started emerging from the cloudy soup. For twenty four bucks it's worth the experience. Always nice to take more notes on the garganega grape
