Since 1750 the Gimonnet family have been vine growers in the village of Cuis, supplying the great Champagne houses with grapes up until the 1930's recession, when sales fell. Today the estate is run by Pierre's sons, Michel and Didier, and in 1987 acquired the house of Larmandier Père et Fils based in Cramant. Classic BdB, light and refreshing, great balance, complex with perfectly ripe fruit, bubbles and mousse. Lingering finish with bright mineral ending.

This is radiant & full of clarity as soon as the cork pops & the generous aromas of vivid citrus & pear start escaping. This was the anchor to of all things a pork chile verde stew. The bright acidity & crisp green apples balanced the mix of vegetal & spicy notes in the food. Where it really began to show itself was as it picked up weight & showed a lush creaminess in tension with the brightness & minerality on the mid palate & through the finish. This is a Champagne that I will always return to.
