Definitely on the right track in its aging process! This is a wine wasted on food and pairings. It is one to pour on a sunny, cool, and breezy day - like a day in harvest season in Bordeaux. Classic white Bordeaux. Not too much oak influence, balanced and crisp acidity, slight under ripe fruits. Aromas similar to Pouilly-Fume, who also would argue Sauvignon Blanc is it's native grape. Flint, lemon zest, white peach, granny apple skin, pine resin, under ripe grapefruit, creme brulee, roasted ginger, lemongrass, golden pears. 2010 will age for at least 15 more years, and yet it is just so delicious right now. Get 5, drink 2 or 3, and keep some for as long as you can.

The ultimate #delectableapp dilemma: I get it, I appreciate it, I could find place for it on a pairing menu, I hold it in high esteem for being a classic, well-made example of #BordeauxBlanc. But in this case I'm not a fan of the classics...someone soaked a freeze-dried marshmallow in grapefruit juice, then toasted it over a French oak flame. Some people love this stuff, I've been told.

2001 vintage. Blanc. Aged extremely well. Slight hint of tropical but taut and fresh. Beautifully balanced and delightful 14 years on. Highly recommended for pure expression of Graves.
