Color of a young white wine, soft but bright straw-yellow. Mineral and herbal nose. On the palate, true expression of Sauvignon Blanc: Herbal, zesty and lime freshness, fleshy and round. Not overpowering acidity, just enough to keep the structure and the foundation of the wine solid throughout the finish. @sommselect I guess I kind of understand the profile of Sauv Blanc from Kimmeridgian soil. Fascinating... next time will taste a Chablis alongside to taste the similarities. Did a bold pairing with fish curry (paprika, coriander and ginger mainly), went really well especially because the dish did not have any creamy or buttery flavors. The fish has fats that is really oily (very Asian), so that kind of complemented this wine I think!
