Sipping Fine Wine

Named after an island at the mouth of the Vigo Estuary. Native yeast fermentation with natural temperature regulation, small amount aged in stainless. Vivid straw yellow with citrus and stone fruit aromas with zesty character. The palate shows apple and juicy peach flavors, crisp with salty mineral tones. Medium+ finish, well balanced with generous acidity. Very nice!

Possibly the most acidic white wine I've ever tasted. Like eating a lemon head candy. I definitely smell some oak, but I don't pick it up on the palate. Definitely pair with food.
