I seldom drink rosé, unless it’s champagne of course, but the appelaing recipe and heritage of Clos Cibonne caught my intention.
The Cuvée Prestige Caroline is a very pleasing rosé indeed, the elevage in oak adds a comforting and balance complexity, taking those fresh red fruit character and adding a well portioned chunk of vanilla whipped cream to the canvas, a broad texture is gracefully being led by a fresh spine, creating a balanced interplay throughout the finish.

This bottling offers more complexity and salty flor character than the regular cuvée, but at the expense of a bit of charm. It was still very good with Cinnamon's ham, asparagus and cheddar quiche. More ham pairings to come... Our Easter roast almost weighed as much as a case of Champagne!
