The 2021 Chablis Valmur Grand Cru, aged in foudres, takes time to unfurl on the nose with touches of asparagus and nettle, well-defined if rather austere at the moment. The palate is well-defined with a slightly peachy entry. Lightly spiced and harmonious with those foudres allowing the terroir to drive the finish. First bottle was premox. Second bottle was up for it. Expressions of lemon and wet rock. Acid is still pretty good given 08' was a bit warmer.

Nose of ripe golden apples, preserved lemon, elderflower. The apple and lemon come through beautifully in the palate with bright acidity and just enough oaky vanilla and creaminess to create perfect balance.

2008 Vintage. 13% Alcohol. Wet rocks and lemon but honeyed with age. Just enough acid to still enjoy. Drink up in my opinion.

Beautiful wine of purity and finesse... still a baby but nice to see where it's at. Good weight. I know people had issues with the 2011 vintage, but there is absolutely nothing wrong here.
