Vaillons Chablis 1er Cru Chardonnay

Stunner. Minerally, fresh and clean. There is some volume here too but it is beautifully offset by bright acidity. Lemon verbena, essential oils and mandarin orange. Just great!!

Taken to the outdoor theatre in Carmel. Light bright color. Sharp and enticing nose. Notes of lemon and and a bowl of citrus fruit, some white stone, some tan spice. While a recent 05 Forest was more CA like, this screams young Chablis. If these 08s can avoid the Plague, they will be special in 10-20 years.

Young and energetic, waxy yellow, bright. Amazing texture and length

Maybe this bottle isn't in a good place. Lactic, oyster shell aromas, citrus and mineral. Acid seems a bit disjointed and phenolics stand out. This is night two with this bottle so it's not getting better with air.. Hoping the other bottles are more in line with expectations

Intense cured lemon on nose and palate, minerally with incredible length. Excellent.

Still a baby and suffering from a bit of reduction, but started to open up after an hour. Chamomile, heather, hay, menthol, iodine, pear, seashells, and lightly ripe pineapple. Rich and leesy af.

Mineral stones shells but also hefty amount of fruit. Ripe pick?

Really unfortunate sulphur/reduction on the nose. Decant or, better yet, give it another 5 or 10 years.
