Super lemon limey with a heavy chalky tone. Takes on a cucumber parsley tone tone with sea salt. Would be fantastic with oysters. Medium weight would also work with mussels or clams.

Does an amazing job of walking the tightrope of new/old world, fleshy fruit (pear, quince, pomelo), with just enough acid to keep it in balanced. A bit of nutty bitterness at the finish-- what it needed..,.
